Looking for a gluten-free crêperie in Mulhouse? At Crampous Mad, all our galettes are 100% buckwheat, and therefore gluten-free, as our menu states. Here is what you need to know to enjoy them with peace of mind, whether you avoid gluten by choice or by necessity.
Buckwheat, naturally gluten-free
Buckwheat, called sarrasin or blé noir ("black wheat") in French, is badly named: it is not wheat, nor even a cereal. It is a plant from the same family as sorrel and rhubarb, and its seeds contain no gluten.
Our galettes are made with buckwheat flour only, with no wheat flour. That is what gives them their brown colour and nutty flavour.
A crêpe, on the other hand, is made with wheat flour (froment), so it contains gluten. To learn everything that sets them apart, read our article Galette or crêpe: what's the difference?
Which galettes to choose?
All our savoury galettes are 100% buckwheat. A few ideas to get you started:
- La Complète: fried egg, ham and Emmental, the must-have;
- La Nordique: smoked salmon, horseradish emulsion, fresh onions, capers, chives and lemon;
- La Fjord: smoked salmon, creamed leeks and cream;
- La Seguin: goat's cheese, honey and walnuts;
- La Cabri: goat's cheese, Parma ham, a drizzle of olive oil and olives;
- S'Zewala: fromage blanc, crème fraîche, bacon lardons, Emmental and onions slow-cooked in cider, our nod to Alsace.
Fancy something simple? The galette au beurre, with good salted butter, lets the buckwheat speak for itself.
Build your own galette
You can also start from a butter galette and choose your own ingredients: ham, Kassler (smoked pork), chorizo, bacon lardons, French minced beef, flaked tuna, fried egg, Emmental, goat's cheese, Roquefort cream, or slow-cooked tomatoes, onions, mushrooms or leeks. On the side: a bowl of green salad.
Children are not forgotten: our kids' menu, Le Menu Bambin (€10, up to 10 years old), also starts with a savoury galette.
Coeliac? Our advice for ordering
Buckwheat is gluten-free, but a crêperie is not a gluten-free kitchen. If you are coeliac or very sensitive, here is our advice:
- Tell the team when you order. Our wheat crêpes are made in the same kitchen as the galettes, so traces of gluten cannot be completely ruled out.
- Ask for our allergen menu. A specific menu is available on request.
- Check the fillings. Some prepared ingredients, such as cured meats or sauces, may contain gluten depending on their recipe.
- Don't hesitate to ask questions, when you book as well as when you order: the team will be happy to answer.
What about dessert?
- A buckwheat crêpe. Our sweet crêpes are made with wheat, but they can be made with buckwheat on request. Say so when you order and ask the team for advice on the topping.
- Artisan ice cream. Our ice cream is made without preservatives and with fresh fruit: lemon, strawberry, raspberry or mandarin sorbets, and creamy coffee, salted butter caramel, chocolate, hazelnut, coconut or vanilla ice creams. For the sundaes, check the toppings with the team.
What about drinks?
- Cider, made from apples, is normally gluten-free. Our Val de Rance cider comes in brut (dry), doux (sweet) and rosé, and Galipette makes an alcohol-free version.
- Wine is normally gluten-free too: try a Riesling or a Pinot Noir from Maison Heimberger, in Beblenheim.
- Watch out for beer: it is brewed from cereals that contain gluten (Britt blanche is made with wheat malt, Ar-Men rousse with barley). The same goes for shandy (panaché), Monaco and alcohol-free beer.
